The Hawk: January 3, 2020

January 2, 2020 6:48 pm

IACS Hawk

Week ending January 3, 2020

Dear IACS Community,

The IACS School Nutrition Program strives to continually improve its program by setting new goals each year. For example, with new equipment, space and increased staffing in place, a switch from a partially catered meal program to a fully in-house meal program was implemented in 2017. This change was well received by the students and resulted in a 22% increase in participation over the prior year.

The goals in 2018 were to offer a wider variety of choices through a Grab-n-Go station and to offer more multicultural meals. The Grab-n-Go station allowed students to have daily access to an alternate meal including, freshly prepared sandwiches, salads & yogurt parfaits. Monthly menus featured multicultural meals such as, Korean Beef, Chicken Tikka Masala, Mexican Chicken Quesadilla, House-Made Italian Penne Pesto, Vegetarian Pad Thai and Chinese Style Chicken. Meanwhile,we continued to offer student favorites like the All American Crispy Chicken Filet Sandwich and Bacon Cheese Burger. Positive feedback from students as well as a significant increase in sales, confirmed that we were successful in achieving our 2018 goals.

This year we are expanding our Farm to School Program and establishing a student focus group. 2019’s menus have featured a variety of fruits and vegetables from Farmer Dave of Dracut and Kimball’s Fruit Farm of Pepperell. It has been a pleasure to see students enjoy the locally grown fruits and vegetables including; corn on the cob, sweet, crisp and delicious apples, summer and winter squash, carrots and potatoes. The lettuce sourced from Freshroots Greenhouse of Chelmsford adds both nutritional and esthetic value to our salads. The IACS Farm to School Interns established a student focus group which plans to meet several times throughout the year. Feedback obtained from these gatherings will be used to establish goals for next year’s School Nutrition Program.

As program director, I feel very fortunate to work with the most amazing, hard working and dedicated staff who make it all possible. Not only do they prepare, cook and serve 300-400 delicious and nutritious breakfast and lunch meals each day, they strive to create a welcoming and friendly atmosphere for our students.

Best wishes for a Happy and Healthy 2020,

Karen Drake

Director of School Nutrition and Food Services
